This cowboy beans recipe crockpot style delivers hearty, savory flavors with tender beans and rich sauce, perfect for any family meal.
Ingredients
1 pound lean ground beef
1 medium onion, chopped
3 cloves garlic, minced
1 cup dried pinto beans, soaked overnight
1 cup dried kidney beans, soaked and pre-boiled
1 cup dried black beans, soaked overnight
1/2 cup brown sugar
1/3 cup molasses
1 cup barbecue sauce
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
4 cups low-sodium chicken broth or water
Instructions
1. Brown the ground beef in a skillet and drain excess fat.
2. Sauté onions and garlic until fragrant.
3. Add browned beef, onions, and garlic to the crockpot.
4. Add soaked and pre-boiled beans.
5. Stir in brown sugar, molasses, barbecue sauce, apple cider vinegar, Worcestershire sauce, and all seasonings.
6. Pour in broth or water and stir gently.
7. Cook on low for 6–8 hours or on high for 3–4 hours.
8. Stir once or twice during cooking.
9. Remove lid for last 30 minutes if you want a thicker sauce.
10. Serve hot and enjoy!
